Making my logo into a vecor image that is scalable and with symmetrical even edges

Greetings to all.
I made my logo sketch in ArtRage app, but the edges are rough/pixelated, and I wanted clean even symmetrical outline. I read that a logo is best as a vector image.
How do I get my logo wich is now a in tiff and jpg formats to vector with even symmetrial edges?
I am kind of new to Illustrator, and so I am not very familar or handy with the pen tool right now.

The pen tool respectivela the shape tools would be best suited. So just learn them and then draw your logo. For a clean solution there is no alternative. You could start with this: https://helpx.adobe.com/illustrator/how-to/use-pen-tool.html

To get symmetry, you may create the part(s) on one side and then reflect to get the mirrored part(s); you can use Object>Transform>Reflect, then ClickDrag the reflected/mirrored part(s) into place (Smart Guides are your friends).
Maybe it is most convenient to do that before you start on the non symmetrical parts.
An image/screenshot of what you have/wish may help helpers give more specific suggestions about the creation of different (kinds of) parts.

The first one is the photo of the original wood carving of the design.
The second one is the tracing I did of it in ArtRage, I used the symmterical tool, but if one looks very closly or blows it way up, one can see pixelation or jagged edges.
I would like this symmetirical, both sides (the wings) the same except for the head, but vector without ragged jagged pixelated image so it can be scaled and used for different purposes, like business cards, brochure, website etc.
