I'm just learning how to make my own brushes, and having watched two tutorials, those people seem to have a drop down menu next to each of these options. I do not, so cannot assign my shape to be on the corners or anything..

(the screenshot is using 'pattern brush' but I've tried the other brush types too and it is the same, I've also tried selecting the corner box and selecting 'original, doesn't work, will allow me to have 'foliage' or 'pompadour' as my corners though!)

Can't find any solution online and can't see anything in any settings that might be this...? Please help!

There is no dropdown option in CS6.

You must add your own corner elements for a pattern brush in the swatches panel and you can choose them from the list as shown in your screenshot.

The dropdown options you mentioned were introduced with the auto generation of corner tiles.

What way you try to add a new brush?

Try to prepare any grapchic you need and select it.   Then go to Brushes palette and use Create a new Brush command. You can also drop your design to Brushes palette.

I'm using the lates version of Illustrator and it works fine

What kind of artwork are you creating? What Illustrator tool are you using?

I'm using the current version of Illustrator (CC2019) but that shouldn't matter.

If I make a filled shape with the Pen tool, and drag it to the Brushes panel, or click New Brush, it gives me the option:
