How do I achieve something like this? This type of extruded letters?
If you want a gradient on an Extrude in the 3D tool, you need to make the gradient a symbol and map it to the surface. I also think that this was finished in another program.

You can make it in any 3D application but in Illustrator you can use the 3D Extrude from Effect>3D>Extrude and Bevel. Then you can expand it and color it as you need or playing with the 3D map Art in the 3D effect window.
You may have a result like that.

My recommendation would be to create the text first. The. Use either Envelope Warp or the New Puppet tool to distort the text. There‘s Also the Reshape tool which is another option. Once you’ve done this you can use the FREE new Cineware plugin to make your text 3D.
Extrude and Bevel would also work but is a bit more clunky and doesn’t create a true 3D object. Cineware is free and creates real 3D objects from your Illustrator artwork.

I have just been extruding for years now but I'm still not able to make it different colors. Also, doesn't the file need to be .c4d file before I can edit it in 3d mode? 😕

Not sure how much you know about the construct of this, but just looking at it, I suspect it wasn't done entirely in Illustrator. The organic pinch/bulge looks like the product of Photoshop's Liquify filter.

It could be the Illustrator Pucker, Bloat / Warp tools? Or the Puppet tools?

Yes, sorry, I was assuming you'd be using cinema 4D Lite to create the text for it (it's free as part of After Effects. If you tell me the text content and font you want to use I'll make it for you in C4D? I can then send it to you?

Here is the same file with 3D extrude and bevel applied, choosing a custom, colored shading. You could apply the rainbow gradient via a symbol but it would be pretty complicated as there will be hundreds of surfaces to apply it to. So I'm working on an alternative solution for you. Keep watching this space!

So, just a quick idea. What I did was expanded the text, then separated the letters from the green shading (isolation mode) Put them on different layers. I then selected all the green shading and filed it with a gradient. You can also combine a new fil on top of the original shading using the Appearance panel.
