I'm having issues with strange lines on my screens since the last update for Illustrator 2024 and now have the same issue with Illustrator 2025. Is there a fix? Plus, not all of my art will show on the screen.

That looks like an issue between Illustrator and your graphic card.
Is there perhaps an update available for the driver?
Does it get better in CPU preview?
Or when you turn off GPU acceleration completely in the preferences (that is not a permanent fix, just to locate the source of the issue)

Also, kindly share the System Report for macOS (https://adobe.ly/4f9Usxg) / Windows (https://adobe.ly/3ADbTao) after uploading it to a file-sharing service like Google Drive/Dropbox/etc., so I can investigate this further.

I am on a PC, but pressed control + E. It seemed to fix the issue.

That just turned off the GPU preview. That is not a permanent fix, because Illustrator might slow down considerably.
