I'm trying to type on a path that started out as a letter and I've now converted to outlines, yet it's telling me "you must click on a non-compound, non-masking path to create text along a path" when I try.
Why is that happening? What can I do to resolve the problem? Thanks.

Try this:
Make a copy of your letter-shape to the clipboard (you'll need it later)
Ungroup (shift-cmd-G/shift-ctrl-G)
Right-clcik and select "Release Compound Path"
Add your text to the path (which should vanish)
Paste in front the original letter-shape

Perhaps it is a compound path. Take a look at the Appearance Panel and report.
Also, which version of Illustrator are you using?

That is, you select the object, go to the Appearance panel and don't see anything there?

It's strange when I have one of the letters (now in outlines) selected, it says group with a white box to the left of it. Underneath it says contents. Underneath that, it says Opacity Default.
When I click some of the other letters (also now in outlines), it shows the color of the fill and that there is no stroke in the appearance panel.

Ungroup the object or double click the Contents item in the Appearance Panel.
Guess you'll then see 'Compound path'.

Yes. When I double click on one of the letters it isolates it. Then when I double click on contents in Appearances it says Compound Path. Is there a way to make it a non-Compund path?

Another method: Use InDesign. You can create any shape in Illustrator, select it, copy it and paste it in an InDesign project. Then just use the TypeTool and click on the shape. Done
I wish it would work the same way in Illustrator. Mulm
