Hi Will,

I’m answering from an iPad so can’t do this for you but this looks like something you can use Illustrator’s Image Trace feature by yourself. Place this image into an Illustrator file, click on the image with the selection tool (black arrow at the top of the tool panel) and then choose the Trace option in the control panel near the top of the screen. Then choose the expand button and you’ll have vector art.

Use Pen tool to trace the shapes. It's a very simple learning task, you can use it to improve the vector-drawing skills.
