paths and anchor colours are particular to layers. doubleclick on the layer and pick a colour in the options there.

It is a process.... you can learn several ways to do something in Photoshop and Illustrator and then later on learn yet another way.
These programs are amazing and you will constantly learn from them even as a PRO... you can constantly learn new tricks or ways to do things. Just experiment and remember to have fun!

1. Really depends on how you want to change a path. As there are various ways.
The Direct Selection Tool allows you to pick a point and move it around.
Under Pen Tools there is the Anchor Point Tool that allows you to manipulate the curve of a path by playing with individual points.
There are several other ways.....
We just need to know what you want to do.
2. To change the color.... use the Selection Tool to select an object. The go to the bottom of the tool bar, there you have the main color and outline color. You can click either of these to manipulate the color of an object.
You can also use the Selection Tool and then the Gradient Tool to add a gradient fill to an object.
Again it all depends on what your end goal is.
