When I clicked the right button always "undo" on the top in right-click-menu, but today, when I clicked the right button snap to glyph and unlock image are on the top. How to let  these two functions won't show up in right-click-menu again?

You can't configure the contextual menu.

If you want functions to not appear in there, please make a feature request: Please post bugs & feature requests to http://illustrator.uservoice.com

Notice Monika called it the "contextual" menu. That's because the items appearing on it change with the context. The menu content will change depending on object selection, tool selection, last operation, etc.
