I was hoping someone could point me in the direction of a helpful, ideally free, tutorial on using InCopy — whether that be via video or writing. I apologize if something similar has already been posted here.

You can get a trial to LinkedIn Learning (lynda.com). You won't find anything better than Anne-Marie Concepcion's courses.
