Before view is NOT original photo

New Here ,

With recent updates I've been shocked to find that, when click the "Before" option (with Before/After view), I am NOT seeing the original image, but some strange version of it.

Does this happen to all files, or just this one?

What happens if you right click the Import step in the History panel, and choose Copy history step settings to before?

If that doesn't help, would you mind exporting a DNG and sharing that with us? Choose DNG as image format  under File settings in the Export dialog. This will include all your edits.

If the file is under 47 MB, you can attach it here. If it's over 47 MB, you will have to use Dropbox or some other file sharing service.

I have inserted your screenshots in what I believe is the correct order.

Please do not attach screenshots, use the Insert Photos icon in the toolbar.

It happens to all of my images - but for the 10ish years I've used Lightroom, it's never done this before.

What settings do you have as camera defaults? I believe the 'Before' image shows those defaults, not an all zero setting.

What do you mean by 'camera defaults' ?
Before always showed me the original/untouched image until very recently.

Go to Preferences - Presets. That is where you set the camera defaults. https://helpx.adobe.com/lightroom-classic/help/raw-defaults.html

You can never see the "original" raw, you can only see some rendering of it. Even so, if you apply a preset to the image at import, or there are default slider positions, then Before/After view will not show you the original as LrC has rendered it, Before will show you the original plus presets plus default slider positions.

I upload all images directly into lightroom from the SD card, no presets applied or anything.

Still, it would be helpful to confirm that presets haven't been turned on accidentally. Show us a screen capture of the bottom row in the History panel of one of these photos. And remember, you can't really see the original if it is a raw photo, you can only get to Lightroom Classic's rendering, which may be different than other software's rendering.
