I've seen many posts/tutorials suggesting that increasing the size of the camera raw cache is beneficial to performance. Mine is currently set to 30gb but never seems to grow above 10gb even during a heavy editing session.
Curious if anyone else who increased the cache size has seen the increase approach the limit they set?

It may be that the performance problem you are having has nothing to do with the size of the camera raw cache. What performance problem do you have? Please describe in detail.

Wrong end of the stick, it's not about a performance problem.
It's an observation that the cache perhaps isn't being used as much as it could.
Please describe in detail your experience with cache size and usage 😉

It might help to review what the Lightroom Queen website said about the Camera Raw cache size. The following article describes how the thinking about the Camera Raw cache has changed over time, partially due to changes that were introduced such as compression and other Develop module optimizations. Thanks, it's an interesting read although I wonder how much has changed under the hood in 4 years since it was written.
Perhaps a better question then is what causes the cache to be flushed? It can't be space as it's simply not even close to full.
