After realising my LUTs/Presets no longer work in the new update (7.3), I understand I have to convert my presets to XMP and access them from the Profile Tab in the Develop page.
Problem is before converting anything, I cant even see the new "Profile" tab on the right of the page (where there are meant to be the 4 squares) to check out the adobe presets. Ive read that when opening the LR after the update I should have seen a message about Updating Presets to XMP, but I never got that. My LR says its all up to date (7.3.1) but obviously not as I cant even find the Profile tab in Develop or in the view tab at the top.
I can still see the "Presets" bar on the left where my original LUTS are still there, and when I hover over them the preview box on the left the images change, but if I click a preset nothing happens to the actual image.
I have tried un-installing/re-installing LR but I feel like Im in limbo between version 7.2 and 7.3 where neither seem to work.
Any advice would be helpful! Thanks in advance!

You've been bitten by a serious bug in the LR installer. Adobe doesn't offer "perpetual" (one-time) licenses for LR Classic 7, only Creative Cloud subscriptions. But some people who had LR 6 are ending up in this anomalous state.
But before proceeding with possible solutions, an important question: Have you purchased a Creative Cloud subscription (where you pay on a monthly basis)? Or was your last purchase a LR 6 perpetual license?

It seems we are seeing many reports of "Presets not working...." etc, with "Perpetual" installs of LR-Classic.
Adobe should be sending out a memo to all LR registered users explaining again that LR-Classic is only available by subscription.

I think the core problem is a bug in the installer that let's perpetual LR 6 "upgrade" to LR 7 while keeping the license as "perpetual", disabling all the new features that require LR 6.1 or later. I don't think Adobe intended for LR 7 users to have perpetual licenses. Maybe I'll create a post in the feedback forum...

Oh no, I see whats happened. Can't say I received any memo from Adobe.
For LR I bought the perpetual one time license.
What would my next step being? Seeing as I only purchased Lightroom 6 in the last 12 months I would prefer if I could avoid the subscription based payment plan. I tried last night to uninstall LR and try revert back to LR 6 but I couldn't see that option and had to re-install the current version. Would this be an option for me or am I looking at just biting the bullet and paying the subscription?

I think your only option is to revert back to LR 6, but since the LR 7 catalog isn't compatible with LR 6, you'll need to save the word you've done in LR 7 and reimport it back into LR 6:
1. In LR Classic (7), go to Library, select all the photos, and do Metadata > Save Metadata To File. That will save all your edits and metadata changes (captions, keywords, etc.) back to the photos.
2. Uninstall LR Classic: Start the Creative Cloud desktop app, find Lightroom Classic, click the down arrow, select uninstall.
3. Install LR 6: You can do this using the Creative Cloud app, but it's a little easier to download it from here: Download Photoshop Lightroom
4. When you start LR 6, if it doesn't find your old LR 6 catalog (that existed before you updated to LR 7), do File > Open Catalog and navigate to wherever you store your LR catalogs to find and open the LR 6 catalog.
5. Do FIle > Import to import all the photos you added to your LR 7 catalog after you upgraded. Your edits and metadata changes should still be there. But any collections, published collections, stacks, or books you made in LR 7 will be lost.
