I just looked for a solution again, but apparently Lightroom Classic does not support any CMYK profiles, neither in the softproof view nor in the output for printing or files
The same question arises here: ICC profiles icc do not appear in the softproofing list
Lightroom Classic is RGB only.
Support for soft proofing with CMYK profiles was introduced in version 6, but was removed soon after because there were issues with it. Adobe said at the time that it would be re-introduced later, but it has never happened.
