When I open LT, at least 5 minutes pass before I can start working... and it seems like it's supposed to stabilize! Meanwhile, working while it stabilizes is... impossible!

I think the latest update must have affected it.

Please try uninstalling all of your plugins temporarily, to see if that has an impact on the problem.

What type of drive is the Lacie Big Dock? Is that a new catalog location for you? What is the size and space available on that drive?

And, What is the connection interface? The initial slow loading/startup of Lightroom Classic make me think the speed of that drive and the connection is slow.

try creating a new catalog and import a few images. See if that is still slow. It appears you have been upgrading this catalog since Lightroom version 5 so perhaps some problems slipped in.
