Printing sheet paper on Canon Prograf 2100

I have just purchased a Canon Prograf 2100 wide format printer

in conjunction with my supplier we have reinstalled the drivers. 

I understand from my installer that CUPS is installed.

The printer is connected via my home wired network via a network switch.

I am using Mac OS 11.1 Big Sur and Lightroom Classic V10.4

The printer prints perfectly well on roll paper via both Lightroom, Photoshop and Mac “Preview”. It will also print sheet materials using Canon Professional Print and Layout. This suggests that the driver does recognise the capabilities of the machine.

The printer will not print to sheet material directly from Adobe Lightroom and photoshop. (Or Mac Preview) The option to print sheet is greyed out in the paper source section of the print dialogue. See screenshot
