I recently discovered that I have two versions of LR installed on my PC. Both of these are the desktop version, not the CC "cloud" version. I don't know which one to keep and which to uninstall.
I used to be a license user and then a few years ago have been paying for the monthly subscription version. These are the two versions I have:
Adobe Photoshop Lightroom Classic CC
7.1 Release
Camera Raw 10.1
Adobe Photoshop Lightroom CC
2015.12 Release
Camera Raw 9.12
Which should I keep and which should I uninstall? Each one has its own catalog, so how do I make sure that the version I keep has all of my catalog updates?
LR Classic CC is the newest version of the traditional version of LR, also called Version 7.x. So I would keep that one.
LR CC 2015.12 is one major version below LR Classic CC, V7.

Thanks. Do you have any idea how both got installed on my computer? Shouldn't the software just update an older version to a newer version?

No a newer Major version will install into its own folder.
Updates for each major release will install over the top of the previous point release for that version
In the CC DTA there is a check box, which normally by default is checked, to remove older versions when the newer version gets installed.
So maybe you unchecked that check box and the installer for LR V7 C CC didn't remove the older version.
Or the CC DTA didn't see you had LR CC 2015.x installed.

Lightroom Classic CC has recently been updated to version 7.2. Your Creative Cloud desktop application must not be keeping you updated properly.
