I'm using a Nikon DSLR to take photos. Typicall the jpgs are about 2.3MB in size. When I edit using elements and then go to save there doesn't seem to be a way of saving to the original size. I can use the slider and approximate the size, but this isn't the same. Should I always save at the max setting even though it usually results in a larger file (than the original)?

Yes. I'd recommend stop saving anything in jpg. JPG's by it's very nature is compressed from day 1. Jpg's also can't handle transparencies. Save in anything but jpg.
Unless your camera is shooting in RAW the format you use essentialy doesn't matter. Why? Most users (an assumption on my part) create things for online use.
Saving in a larger format, such as TIFF (which does not use compression) doesn't increase the quality of your original image.
