I'm adding the date on some photos using T and it usually works, but occassionly when I type there is only a horizontal line or the font is incredibly small. What can I do? I've tried to adjust the font size, but no luck.

For all fonts?

Try resetting the text tool or the preferences.

Don,

You are no limited to the default pt sizes in the drop-down for the fonts. On the Type tool's option bar, highlight the value that is on display, and enter 110 or 140 (experiment).

These adjustments are necessary depending on the resolution of the underlying file.
