I would like to buy an iMac 27'' 5k retina 2019 so I have few questions.
The configuration I aim for is this:
So my question is about the processor:
-- Should I buy 9900K or 9900KF ?
I use this iMac mostly with Photoshop + Lightroom and also Premier.

Before worrying about the processor, I would look at the rest of the spec.
1. Since you mention "suite", check that you have Creative Cloud; an old Creative Suite cannot run.
2. I do not see 40 GB as an offered amount of RAM. I only see 8/16/32/64 GB. For serious use, 32 GB sounds good.
3. I am very worried that you propose to get the smallest available SSD, 512GB. This does not sound enough for serious use. Many people have been trapped by their initial choice here, which is much more important than CPU.

I will buy it with 8GB ram and I have home 32GB more to complete.
I have external drives for more storage, don't worry.
My single doubt is about the i9 K or KF ?
Adobe products needs additional GPU from CPU or not ?

That site is a third-party site that may have disassembled and reassembled those systems (whereas Susumu's image came directly from Apple's US website). Apple officially does not offer the i9-9900KF at all in its iMac. All CPUs that are officially offered in the iMac have the integrated Intel UHD graphics present and enabled (the 9900KF has the Intel graphics permanently disabled at chip manufacturing level).
The 3.6 GHz non-Turbo clock speed automatically eliminates the plain i9-9900 (non-K), which has a stock clock speed of only 3.1 GHz. That leaves the i9-9900K as the only i9 CPU choice in the iMac.

Can you please help me to take a decision about the VEGA 48 ?
Should I go with 580x at 8GB GDDR5 or with Pro Vega 48 8GB HBM2 ?

It doesn't seem to be a good idea to buy a remanufactured Mac (if that's what it is), which won't have Apple's warranty. This also has an out of date list of storage compared to Apple's web site. And it doesn't mention Apple's newer system, the iMac Pro.

Thank you so much for implication.
The thing with the processor is now clear for me. Apple doesn't support i9 9900KF, just 9900K which have the graphic integrated and works on higher temperatures than KF.
The other question is that is worth to opt-in for:
580x 8GB GDDR5 or VEGA 48 8GB HBM2
