Hi all,
I've purchased a Mac Mini M4 Pro and am looking to buy an ultrawide monitor so I can now edit using one large screen (vs. the two I now use- 27" iMac and 27" Dell). I've heard lots of chatter about ultrawide monitors not playing nicely with Premiere. Has anyone experienced this?
Are there any monitor recommendations? Ideally 40" or larger.

You have heard wrong my friend. Ultrawide monitors and Premiere Pro work awesome together. I could never go back to a 16:9 monitor. Having said that the M4 Mac Mini or M4 chips in general might be defective. I can compensate for the defect by using 3rd party hardware.

I've been looking at ultrawide displays lately as well.
This has my attention, but the price is pretty high:
Samsung Odyssey Neo G9 57" Dual 4K HDR 240 Hz Curved Ultrawide Gaming Monitor
For a good while, I've been considering this:
Dell UltraSharp 39.7" 2160p HDR 120 Hz Curved Thunderbolt Hub Monitor
While this is older and only 34-inches, I would give this a close look as well:
LG 34BK95U-W 34" 21:9 UltraWide 5K2K WUHD Nano IPS Monitor
Or the 39.7-inch LG 5K2K:
LG BP95C-W 39.7" 2160p HDR Curved UltraWide Display
The 5K display of the Retina 27-inch iMac is excellent and hard to give up. While the Apple Studio Display makes a great replacement, it's expensive and obviously not ultrawide.
I used the LG 34UM95-P 34" 21:9 UltraWide IPS Monitor with Thunderbolt with my 2013 Mac Pro. When I first started using it, I felt that if there was one thing I could change that it would be a higher native resolution than 3440-by-1440. LG eventually offered the 24BK95U at 5120-by-2160, but I never upgraded. At the time, I still used a second 16-by-10 Dell display with it for full frame previews in Premiere Pro and After Effects. For the many years I made good use of that 2013 Mac Pro and LG display, the whole time I kind of wished I'd gone with dual 27-inch Apple Thunderbolt Displays (they were just so expensive at the time).
Some users are reporting an issue on the Windows side with the display scale property being set to different values across more than one display. I'm not sure I've seen anything specifically about ultrawide display.
