その設定の公式なアナウンスでは以下になっています。

Select preferred Photoshop version

This feature allows user to select default Photoshop version which would be launched for Photoshop specific workflows (Place in, Tools menu) from Bridge.

If a user has multiple versions of Photoshop installed, they can select a specific version from Preferences > Applications to execute Tools/Place-in operations.

Note: These preference changes will not affect the Open and Open With operations. They will continue to be associated with the default file type associations (FTA).

要約すれば

その設定は ツールメニューのデフォルト Photoshop バージョンを決めるもので「開く」には影響しません。

「開く」の際のデフォルト Photoshop バージョンは「関連付け」より選択してください。

ということになります。

自分の環境「macOS Sonoma 14.5 + Bridge 14.1.1」では「関連付け」より設定した Photoshop バージョンにより開くように変更されます。

この設定で .psd ファイルをダブルクリックすれば Photoshop 25.9.1 より開きます。

そのオプションは画像との関連付けには関係ありません。私もちょっと期待したんですが。

コンテンツタブから画像を選択して開く際に使われるアプリケーションは、「関連付け」から設定します。

ただ、beta入れてるとすべてbetaになって変更が面倒ですから、設定ファイル

~/Library/Application Support/Adobe/Bridge CC/Adobe Bridge Opener Preferences.xml

に強制的にアプリのあるパスを追記してやる方法を、私は使っています。
