If your digital certificate contains an embedded timestamp URL, Adobe Acrobat will timestamp PDFs when digitally signing by default. If no timestamp URL is embedded in your digital certificate, or if you wish to only place a timestamp, a server must be specified manually.

If the issue still persists, would you mind sharing the steps you did to specify the timestamp server?

Please try the steps below to specify the time stamp server manually and see if that works for you.

Go to Edit (Windows), Adobe Acrobat (Mac) > Preferences > Security , Click More > Click Timestamp server > New and enter the name and the URL of the timestamp server (If the server requires authentication, check the box and enter your credentials.)
