I have been using this software for a while with little to no issue, but it seems recently that I have been running into an issue. Every time I have been uploading a document, it replaces letters and words of mine with random letters, words or even numbers.

When I say "Uploading a document", I did mean that because there is an option to do so, but I am taking a document from my computer and putting it onto the adobe platform. Then trying to change it afterwards. I hoped that helped answer that question.
