Could Lightroom automatically store a has_been_printed boolean field, and maybe a printed_date field?

Not with built-in commands, but you can search it with the Any Filter plugin (see above).

While waiting for Adobe to implement this, you could use the Any Filter plugin to filter by the date/time photos were last printed:
