Add test field to a fillable form

If using a form with no form fields  I can add text fields to fill it out and then sign, but if it is a form with fillable fields and I want to add a text field I can not add a text field only sign. I need to sometimes add a text field. Is there a way to do this? Or is this an improvement adobe should be looking at?

also, how do you sent suggestions for improvements?
