Can't Fill Out Fillable Form- Security Options all Good

After hour 4 of filling out a fillable PDF I went to add my signature.  After doing so I saved the document and closed the application.  Went back to continue and now the fillable form is no longer fillable.  I click on a field where I had previously entered text but when I type any characters I get the error sound and nothing happens.  Looking through the Adobe forms prompted me to look into my security settings to ensure something wasn't changed.  Everything in the "Document Restrictions Summary" is "Allowed" except for Document Assembly or Page Extraction, both of which are irrelevant to me now. 

Please help!

    Signing the form locks the form.

    Correct. Signing the form is a way to say you have finished and everything is accurate. That should be the last thing you do.
