It seems like SUCH a simple option. ALL freeware programs have it.

I just want to be able to decrease the font size of the text I copy/pasted in a fillable form field. Why is that not possible?

It depends on how the author of the form has set up the fields. If they allow Rich Text you can open the text properties dialog by pressing [Ctrl]+[E]. There you can change site, color etc. However, if the fields only support plain text, you're locked to the given font and its size.

Wow – I was searching literally dozens of sites concerning this problem. [Ctrl] + [E] IS the simple answer I was looking for. But why is there no visual button for this option? Or am I stupid and just didn't find it? I really did try!

Thanks for the answer!
