my pdfs are listed by number but I would like to be able to edit them so that I can readily access the file I want. Any help appreciated.

It sounds like you just want to rename the files. There are two ways you can do this.

You can open each file in Acrobat Reader and use File>Save as to save the file to a different name or, you can open Windows Explorer, navigate to the files, right-click and choose "rename". Either way works so just use the one that you like best.

I have a lot of PDF sewing pattern which show only the number of the pattern and if I don't know the number I'm looking I have to go through them until I find the one I'm looking for. I'm not very techy but I'm sure there must be some way I can recognise them without looking through them all. Thank you for your help.

Can you give us a little more information on what exactly you mean by "edit"? Adobe Acrobat Reader cannot edit pdf files but there may be another product that will work depending on what you want to do.
