Extract Tax From Images In A pdf?

Nowadays I am working on a research paper Thrips  as Hazard for large leaves plants , i am encountered with a lot of documents in PDF format where everything is in form of infographics or text on images. Is there any way to extract that tax. It will save plenty of time for me as a researcher. It is my MS project and it is getting messy a lot.
