How to edit text on a pdf, but still show old text with strikethrough

Hello All, I am working on editing an Employee Manual, but any old data, has to be crossed out and new, updated data has to show in different color.  In other words, it is supposed to show a track record of changes that have been made.  I also own Acrobat Pro XI, if I need to use it.  Thank you very much as any help would be greatly appreciated.

    Not possible with just the free Reader and, in my opinion, difficult to achieve in Acrobat. I would suggest working on the original document (the one from which the PDF file was made) and produce a new PDF file.
