How to interrupt OCR scanning?

I am dealing with multi thousand page docuements and experiencing a host of problems with Actrobat DC.  For example, I scroll down the pages Acrobat does not show the bookmarks associted with those pages (I have zero idea why the Heck Adobe cant' fix this dumb problem). 

Also I often have to run OCR to recognize text, and with muti thousand page files, this can take a terribly long time.  Is there a way to select a range of pages to scan?  And, if I decide to give up on a scan after an hour or two, is there a wayt to force DC to stop (other than control/alt/delete)? I keep clicking cancel, and DC just ignores me.
