How to uninstall current Adobe Reader from my MacBook and Why can I not upload pdf's to a website which is requesting an upload of a document in pdf format?

Forgive me for not being the most gifted of persons regarding, some basic operational issues.
I recently got my MacBook back after removing a damaged Internal Hard Disc and changing to a SSD. The "apple specialists" who did this for me, did not fully copy over, all software programs, among other things.
I needed to upload a copy of my passport in pdf format for a site requesting such proof of ID documentation. I located a pdf copy of an earlier file, but: 1. I couldn't open the pdf because "Adobe Reader" program was unavailable. 2. I located the last version of Reader I had downloaded and which was fully operational before. I was able to re-install the Reader program. I then went back to the website requesting the pdf upload but when trying to choose the file it rejected it. I then downloaded a newer Reader but that would not install. I then noticed that in my downloads folder "Adobe", there were multiple files looking the same that were to be installed.
At this point I gave up and searched online how to remove and un-install all Adobe Reader files. I haven't been successful in locating such information. Though I found some forum chat from some others who instructed a person to remove and un-install all files and upgrades completely from their Mac OS, and then re-install everything from new. Sadly they didn't go in to any detail how to comply with their advice. Hence I'm in need of some help!
