I want to simply add a password to open protect a document (PDF) but in the Tools section I don't see the option to do so.  Do I need a paid subscription in order to do so?  Thank you in advance for your help.

Yes, you need Adobe Acrobat for this.

I create pdfs in Acrobat Pro and password protect them. If I discontinue my subscription to Acrobat Pro will I be able to access these documents in the free reader version?

I have purchased Adobe Acrobat for password protection of PDF opener, and yet still I am unable to protect my document.

When I go to Tools, Protect, it only says Add or learn more.  When I click add it simply takes me to the purchase another subscription for $12.99/month site.  How do I get password protection without having to purchase again?

Open the file in Adobe Acrobat, not Acrobat Reader.
