Hi, I'm using Adobe Acrobat Pro on Creative Cloud and i'd like to ask if its possible to edit a PDF file that has been Digitally Signed

No. One of the whole points of a digital signature is to prevent editing once the document has been signed, except for filling in form fields (if allowed) and/or signing it again by someone else.
