White space is printing all black.

I've got the Acrobat app on iOS.

My iOS is up to date.

My printer is an Epson WiFi printer. Firmware is up to date. Print heads are clean and all maintenance is done. 

I have tried printing a 23 page pdf now 3 times (in full colour) but it's printing all of the white white space in black. Not only is this a crazy amount of ink & paper now lost it means the text is invisible. All images (showing instruction examples) within the document are printing out ok with white in their backgrounds.  

I can see no settings to alter.

Options offered  are black and white or colour. And page range or all pages.

Its a crochet pattern so the text instructions are vital, plus on paper I can make notes as I go.

Does anyone know please why this is happening and how I can resolve it?
