all of my files that were pdf have suddenly been changed to word with me doing nothing to cause this. How can that happen?

What is your operating system?

Did all your files change their .pdf extension to .doc/.docx, or do your .pdf files just open in Word?

If the latter, this is a simple matter of fixing your file association.
