convert from pdf creates "tables"

Hi, trying to convert a lyric and chord chart pdf to something I can edit into an arrangement txt file (basically, moving and duplicating verses and choruses etc) that the band can use. I subscribe to Song Select and can download PDFs but they aren't arranged, just all the content).

I just signed up for the online ADobe convert to txt PDF service but the output in all of the formats includes what look like tables and the spacing is all over the place.
