How to Convert PDF to Excel When the Option isn't Available?

Morning!

At work I often have to manipulate data from PDF files and was hoping that by upgrading from Reader to Acrobat that I would be able to convert my PDF to Excel files. However this doesn't appear to be the case, I've tried to follow online tutorials but when I click on File I don't get the same options 😕😕

Any advice please?
