I have created some text boxes but after doing so can't figure out how to not have another taxt box pop open when I click on the pdf document. How do I turn it off?

If I understand correclty, it sounds like the Commenting tool is "stuck." Have you tried selecting a different tool in the Commenting panel? Or opening the Tools panel?

It's not normal behavior that the Sticky Note tool with would stay active like that after you place a Sticky Note, so if the behavior persists, you might want to reinstall or repair Reader (or Acrobat).
