Photos and evaluation ratings and forms central

I am using Forms Central to create an evaluation form.  Instead of using words or numbers as descriptors (e.g. 1 = Bad; 2 = Poor; 3 = Good; 4 = Very Good; 5 = Excellent), how do I insert emoticons?  Thus far, I am not able to copy and paste microsoft emoticons.  Any ideas?
