Why is the text unreadable when I convert a pdf to a word doc?

Probably because the original PDF contains bad text encoding in the first place.

What happens if you select some text in the PDF, copy it and then paste it into another application, like Word or Notepad? Does it come out as gibberish? If so, the file is corrupt and exporting it to another format is not going to change it.
