I have to make a banner of 3m by 2.50m but it is not possible to go beyond a certain number of pixels how do I know in advance how to convert?

I do not undersatnd what you mean by how to convert?
I would ask the banner printer what is his recommended "pixel per meter" for this size banner, and then just set your canvas to that number of pixels for a 3 x 2.5 meters size.
