Sorry to hear that you are finding the inability to resize a collage upfront limiting enough that you want to delete the app. The team is aware of the gap, and will hopefully priortize this soon. In the meantime, there is a workaround, even for a free user. I understand that it's more tedious and may not yield the most satisfying results, but here goes anyway
- After creating the collage using the quick action, click "Edit more" (this will create a new Express file with a square page containing the collage)
- Select the collage/grid and click "Detach background"
- Click "Copy"
- Add a new page with the desired aspect ratio
- Long-press to reveal the context menu and click "Paste"
- Click "Set background"
(Note that pasting to a separate page and the "Set background" step is not neccessarily required, but it will help specify the aspect ratio precisely and clear any whitespace around the collage. If that is not of importance to you, you can freely resize the collage on the first page itself using side handles. This is actually one of the capabilities of collage/grid in the new version: it does not have to stay pinned to the background. And you can add as many collages/grids on a page as you want)
