Fonts problems

when i go into the styling platform (to me there should be one place to edit not EDIT and also styling.....creates confusion on what happens where yuk - but i digress)
My fonts in the STYLING platform do not have any Helvetica. - (see Helvetica-Huh screenshot) So i chose Arlette
When done with 'styling,' i downloaded the new version as PDF
I had to make a few more text changes. Ii opened in Acrobat the PDF i had downloaded and selected EDIT mode. When i tried to adjust a line of text , I got a message telling me the font i was forced to chose in STYLING is not accessible in PDF EDIT and Helvetica will be substituted. (see fontCHANGE screenshot) Helvetica was substituted for text i changed . the remaining text was still Arlette in the PDF (see arletteinPDF screenshot) - i call that a stupid mess.
Worse the pdf quit unexpectedly after 5 adjustments. When opening, the recovered PDF, the first page (where i had completely changed the copy from the original when in styling) had reverted to the original text. Thar meant an entire page of changed new copy GONE
i quit no saving and opened the html which i had left open online in express. It did not include the 5 text changes in the revised PDF that had just quit but was close--this is CONVOLUTED and not stable.... WHY ARE THERE 2 places to revise - the EDIT and STYLIZE that is bad software design..... and why did i not see any helvetica listed in the styling workspace?
