Using Adobe Audition, is there a way to adjust volume levels during a recording session vs. afterwards?

Audition records only what it's sent from your sound device, so it's your sound device controls you need to alter - there's no way that you can control this with Audition. Generally it's not a good idea to do it, though - it makes sorting out the levels afterwards rather difficult, especially if you find that you need whatever it was that was happening as you made the change.

Specifically, there are two things you can do to prevent the need for this. The first is to allow sufficient headroom for the worst thing that could happen - and that generally means between 12 and 15dB. Modern sound devices are quite happy with this, as they have much better performance than older devices, so you don't pay a noise penalty. The other thing you can do with live mic feeds is to use external hardware limiters on them, so the levels are automatically capped at a sensible level, and even if somebody screams, it won't overload.

Ok thanks Steve. The recording is just so low I thought it could be adjusted somehow.  But from what you're saying looks like I need to adjust in post production.

Or increase the audio gain in your audio interface to record at a higher level in the first place. But, yes, otherwise adjust it in postproduction to suit the rest of the audio.
