Adobe audition - choppy playback - why?

Probably because your playback  buffer size is too small. Depending on the driver model you are using this may also display as a latency value. However it's displayed, you need to increase the value. It's adjusted in the Hardware page in Settings, and you may need to experiment a bit to optimise it. Can't tell you any more without knowing about your sound device.
