Audition not allowing me to capture a noise floor to DeHiss

When I have my audio clip imported into Audition, I am able to highlight a small section and capture the noise floor by right clicking (only sometimes). However even if this has been successful, when I go to capture the noise floor for the dehiss process, I am able to click the 'capture sound floor' button but it times out within miliseconds and just doesn't bother capturing anything. What can I do?

Since Audition doesn't have a process specifically named 'Dehiss', I don't know exactly which process you are talking about. Denoise and Hiss Reduction don't use noise samples - indeed the only one that does is the Noise Reduction (process) effect. If you use too short a sample with that, then it won't work anyway; you have to reduce the FFT size in order to get anywhere with it.

So how can I remove mic hiss using Hiss Reduction?

Set the 'Reduce By' slider to somewhere around the +20 to +30dB position and advance the Noise Floor slider until the hiss reduces. You may have to experiment a bit with the sliders, but there's absolutely no noise sampling involved. Using Noise Reduction with a suitable sample generally works a lot better though.
