Automated volume adjustments between two voice tracks (interview)

I've searched and search for an answer to this but can't seem to find one

I've recorded a simple interview between two people using two microphones. I have the audio in a multi-track session on 2 separate tracks

HOST = Track 1

GUEST = Track 2

Of course, whenever the host speaks their audio is picked up by the guest's mic (on TRACK 2) and vice-versa

I'd like to find a way of mixing the two tracks so that i'm not getting audio bleeding over into the other track.

i.e.

Host speaks, the guest track is muted (TRACK 2) and when the guest speaks, the host track is muted (TRACK 1)

I know i can manually adjust the volume for each individual track but on a lengthy interview this would take a while. I'm also aware i can use a Noise Gate but i can't seem to get this to work how i'd like.
