Can you undo Match Loudness after you save?

No, not if you saved over the original file I'm afraid. The lesson is always work only on a copy of your audio files never the originals. You can always delete the original when you are completely happy with your editing results. I always do a Save As with a different name, even just adding 'copy' to the file name, when I first open an audio file to edit in Audition.
