Question

Each mono channel recording from both mics

Help!  I don't know what has happened, but each mic is now recording on both the host and interview channels in multitrack.  This wasn't the case before and I don't know what's changed.  Even when I mute mic 1 and tap it, it still records on both track 1 and 2.  I have a Steinburg UR44 and 2 Rode NT1-A mics.  I'm attempting to do a podcast, but this isn't going to work for me and I don't know if it's the software or the hardware.  Please assist.  Thank you.

First thing you should do is to check the input assignments on each track, and make sure that it's set so that only one mic can record on each...

I have that set-up correctly. Just to make sure here is a screenshot. As you can see it's recording audio on both tracks and the second mic is across the room.

Okay - on page 11 of the user manual for the UR44 are the instructions for the dspMixFx app. Chances are that you've got the channel link button set for 1&2, and the pan pots for each channel set to centre. You need the channels separated! However you look at it, you need to become intimately acquainted with the app - that's the answer to most of your problems; almost certainly this one.
